Sharkfin Melon with Crabmeat Starchy Soup

Normal Stove Top Wok / Pan

Ingredients

A big piece of sharkfin melon-(deskinned and use only flesh not with seeds)then cut into smaller pieces,so that it can easily break in shreds while boiling
2 Big chicken bones/pork spare ribs for flavour
A handful of small scallops
few red dates
Salt to taste
Crabmeat(fresh /frozen thawed )
2 slices of ginger
1 teaspoon of chinese cooking wine
2 tablespn of sweet potato flour;
/cornflour >to mix well
3 tablespoon of water;

Prep and Cooking Instructions

Parboiled crabmeat with slices of ginger and cooking wine to remove fishy smell(set aside )
Parboiled chicken bones/ribs to remove scums
Boiled cleaned chicken bones/ribs with melon ,scallops and dates.
Medium high heat for 15 min ,then reduce to medium low.
Add in crabmeat at last 15 min .
Stir and separate the melon shreds if some still in whole piece
Add in sweet potato/cornflour mixture to thicken.
Serve hot with black vinegar and pepper
